Apple strudel – quick and easy

Ingredients for 7 servings:

  • 2 large apples
  • 2 tsp butter
  • 1 tsp cinnamon
  • 50 g sugar
  • 1 tbsp raisins
  • 4 cl Amaretto
  • 1 tsp cornstarch
  • 2 tsp water
  • 7 slices of toast

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Mini apple strudel in a crispy toast coating

Preheat the oven to 165°C (fan/convection oven). Core and dice the apples. Melt the butter in a saucepan. Add the cinnamon, sugar, raisins, and apples. Add the Amaretto and simmer for 10 minutes over medium heat, until the apples are tender. Mix about 2 teaspoons of water with 1 teaspoon of cornstarch and use this to thicken the apple mixture. Meanwhile, remove the crust from the toast and roll it out flat with a rolling pin. Place a little of the apple mixture onto each rolled-out slice of toast. Roll up all the slices, brush with melted butter, and then roll in the cinnamon and sugar. Place the little apple strudels in a baking dish and bake for 10 minutes. Serve with vanilla sauce.
