Ingredients for 4 servings:
- 200 g flour
- 50 g almond(s), finely ground
- 125 g sugar
- 100 g butter, cold
- 1 egg(s)
- 1 egg(s), including the yolk
- 1 pinch of salt
- 1 tsp cinnamon
- 1 egg(s), of which the egg white
- 2 tbsp sugar
- Fat, for the tray
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes
Sift flour and mix with almonds. Add sugar, finely chopped butter, egg, egg yolk, salt, and cinnamon, and knead into a smooth dough. Wrap in foil and chill for 1 hour. Roll out the dough on a floured surface, cut into narrow 17 cm strips, and shape into pretzels. Place the pretzels on a greased baking sheet, brush with egg white, and sprinkle generously with sugar. Bake in a preheated oven at 200°C for about 15 minutes.
