Mediterranean chicken breast

Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 1 sprig(s) rosemary
  • 1 clove(s) garlic
  • ½ tsp thyme
  • ½ tsp oregano
  • 2 tbsp olive oil
  • Salt from the mill
  • Pepper, colorful from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Fast and tasty

Cut the chicken breast fillets into bite-sized, not too small pieces and season with salt. Heat the olive oil in a pan (do not overheat if using extra virgin olive oil, as extra virgin olive oil cannot tolerate high heat) and brown the meat. Season with pepper after browning. Quarter the garlic clove and add it to the pan with the rosemary sprig. Add the oregano and thyme and cook everything over medium heat for about 5 minutes, stirring occasionally, until the meat is cooked through but still tender. Serve with Mediterranean potato wedges with sour cream or rosemary potatoes and a salad with a simple dressing.
