Kahlenberger Fiaker soup

Ingredients for 5 servings:

  • 1 kg white cabbage
  • 350 g potatoes
  • 2 onions
  • 5 sausages (knackers)
  • 1 cup sour cream
  • 2 cloves garlic
  • Salt
  • Caraway seeds
  • marjoram
  • Paprika powder, sweet
  • some lard or oil
  • 1 ½ liters of meat broth
  • some ketchup
  • some parsley, finely chopped

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes

Coachman’s soup, Fiaker soup

Finely chop the onions and fry them lightly in lard or oil. Add the finely chopped white cabbage, sauté, and season with marjoram, salt, about 2 tablespoons of paprika, ketchup, and caraway. Pour in 1 1/2 liters of meat broth and bring to a gentle boil (do not let the cabbage get too soft). Dice the potatoes, add them, and cook until tender. Slice the sausages, fry them in a little oil, and add them. Finish with a cup of sour cream and serve with some finely chopped parsley.
