Ingredients for 1 servings:
- 1 chicken
- e.g. olive oil or butter
- n. B. Salt
- 125 ml apple cider vinegar
- 80 ml honey
- 1 tsp mint, fresh
- 1 handful of raisins
- 1 tsp butter

Rub the chicken well with olive oil or butter and salt, depending on your preference. This makes the skin crispy and delicious! Bake in a preheated oven at 230°C for about 1 hour, or until the juices run clear and the thick breast meat is no longer pink. While the chicken is baking, simmer all the ingredients for the sauce in a pan over low heat until the raisins soak up the liquid and the sauce reduces slightly. Remove from the heat and, when the chicken is done, pour the sauce over the chicken. This goes wonderfully with rice or potatoes and a salad.
