Grilled bananas with coconut butter

Ingredients for 4 servings:

  • 4 bananas
  • 50 g butter, about 4 tbsp, room temperature
  • 2 tbsp desiccated coconut, heaped tbsp
  • 1 tbsp, chopped almond(s), ground
  • 1 tbsp honey
  • 1 pinch of ginger powder
  • 1 pinch of curry powder

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Mix the butter with the coconut flakes and the other ingredients and let it sit. Place the four bananas, one at a time, on the grill until the skins are blackened on all sides. This may take a few minutes, depending on the hot grill. Then slit the tops of the bananas lengthwise and set the skins aside. Spoon a tablespoon of the butter mixture into each banana. Once the butter has melted, serve the bananas warm immediately, perhaps with a scoop of vanilla ice cream.
