Caramel cream

Ingredients for 2 servings:

  • 50 g sugar
  • 400 ml milk
  • 100 ml cream or milk
  • 2 tsp, heaped cornstarch
  • 1 pinch of salt
  • possibly vanilla

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Caramelize the sugar in a non-stick frying pan over medium heat until brown (be careful not to overcook it, or it will taste bitter). Then add the milk (careful, it will boil vigorously), reduce the heat, and let it simmer. Mix the cornstarch (2 heaped teaspoons) into the cream and add a small pinch of salt. Once the caramel has dissolved in the milk (takes about 5 minutes), stir in the cream and cornstarch, bring to a boil, and you’re done. Chill and enjoy. If you like, you can also add a little vanilla or vanilla sugar (before adding the cream). For a low-fat version, you can of course replace the cream with regular milk.
