Sour kidneys

Ingredients for 4 servings:

  • 500 g kidney(s) of veal or pork
  • 40 g fat
  • 1 onion(s)
  • Salt
  • pepper
  • marjoram
  • 250 ml water
  • 1 tbsp vinegar
  • 1 tbsp flour
  • 2 tbsp sour cream
  • Milk

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the kidneys, cut them open, remove the urinary tract, and slice them thinly. Soak them in milk for 30 minutes. Sauté the onion in the fat until translucent, add the kidneys, season with salt, pepper, and marjoram, and simmer. Add water and vinegar, cover, and simmer gently for another 10 minutes. Mix the flour with the cream to thicken the sauce. Serve with spaetzle and green salad.
