Potato – Pepper – Vegetables

Ingredients for 3 servings:

  • 600 g potatoes
  • 2 red bell peppers
  • 1 large onion(s)
  • 50 g smoked bacon
  • ½ bunch parsley
  • ¼ bunch lovage
  • 2 sage leaves
  • 150 ml sweet cream
  • 200 ml vegetable stock
  • 1 pinch(s) salt and pepper, black
  • 1 pinch(s) paprika powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes in their skins. Dice the bacon and fry until crispy. Add the diced onion and sauté lightly, then add the diced bell pepper and fry lightly. Peel the potatoes, slice them, and add them to the fried bell peppers. Deglaze with the vegetable stock, add the cream, bring to a simmer, and season with salt, pepper, and paprika. Finally, stir in the chopped fresh herbs.
