Peanut sauce for satay skewers

Peel and grate the ginger and roast it in sesame oil along with the finely chopped garlic and sesame seeds. Deglaze with coconut milk. Bring to a simmer with the spices, soy sauce, peanut butter, honey, and a little lime juice, stirring until smooth. Season to taste and let cool. This pairs well with the chicken skewers, where the strips of meat are skewered accordion-style.
