Chicken Cordon Bleu with lots of cheese

Ingredients for 4 servings:

  • 4 chicken schnitzels
  • salt and pepper
  • 2 slices of cooked ham
  • 4 handfuls of cheese, grated, e.g. Edam or another spicy cheese
  • 150 g breadcrumbs
  • 50 g flour
  • 3 eggs
  • 100 ml oil for frying or margarine, butter or frying fat
  • 4 slices of processed cheese, e.g. toast cheese

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Flatten the schnitzels and season with salt and pepper on both sides. Top slightly less than half of the schnitzel with half a slice of cooked ham and a handful of cheese (depending on the size of the schnitzel; less is usually enough). It only needs to be topped enough so that it can be folded over and stays closed fairly easily without help. Then carefully coat it in flour, beaten egg, and breadcrumbs, and coat it in breadcrumbs. This should be possible without any of the ingredients falling out. Place it in a pan with hot cooking oil and fry until golden brown on both sides. When the cordon bleu is cooking on the second side, add the slice of toasted cheese towards the end. Serve with fries, salad, or just ketchup. Tip: If you don’t want to keep throwing away flour, eggs, and breadcrumbs, you can mix everything into a “dough,” season with at least salt and pepper, and fry it as a flatbread. Clean the pan at the same time.
