Ingredients for 1 servings:

  • 150 g jacket potatoes, from the previous day
  • 120 g smoked pork, fried
  • 2 small apples, variety according to your taste
  • 1 thin spring onion(s)
  • 1 small tomato(s)
  • 100 g gherkins (sandwich), from the jar
  • 1 pepper, red, fresh
  • 150 g natural yogurt
  • 1 tbsp mustard (honey)
  • 1 small shallot(s)
  • Sea salt, from the mill
  • Black pepper, freshly ground
  • chili flakes
  • 1 pinch(s) curry powder
  • possibly cucumber juice
  • possibly fresh herbs for decoration

Working time approx. 20 minutes; Total time approx. 20 minutes

Jacket potato and smoked pork salad with apples, sandwich cucumbers, spring onions and tomatoes

Dice the jacket potatoes. Dice the smoked pork. Peel, quarter, core, and dice the apples. Split the spring onions lengthwise and slice them. Quarter, core, and dice the tomatoes. Cut the cucumbers lengthwise several times, then dice them. Quarter, core, and dice the bell peppers very finely. Place everything in a bowl and mix well. Dressing: In another bowl, mix the yogurt, mustard, and finely diced shallot with the spices. Season to taste and add a little cucumber broth, if desired. Pour the finished dressing over the salad in the bowl, fold in, and then serve on a plate. Sprinkle with fresh herbs if desired.
