Cranberry-Orange Bread

Ingredients for 1 servings:

  • 340 g flour
  • 150 g sugar
  • 1 packet of baking powder
  • ½ tsp baking soda
  • 1 egg(s)
  • 1 tsp orange peel, grated
  • 150 ml orange juice
  • 30 g margarine, soft, or oil
  • 100 g cranberries, dried, chopped
  • 50 g walnuts, chopped
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Sweet bread, American Christmas recipe

Preheat oven to 180°C. Mix together the flour, sugar, baking powder, salt, and baking soda. Whisk together the egg, grated orange zest, orange juice, and margarine or oil using a mixer or whisk. Add the mixture to the dry ingredients and mix to form a dough. Stir in the cranberries and walnuts. Line a loaf pan with baking paper and pour in the batter. Bake at 180°C for 60-70 minutes. Then remove from the pan and let cool. Store wrapped in aluminum foil in a cool, dry place. It’s never been worth it for me, though, because it always goes so quickly. Enjoy on its own or with spread. I like it best simply spread with a little butter.
