Ingredients for 2 servings:
- 400 g duck breast
- 250 g mie noodles
- 150 g vegetables, frozen, Asian style
- 2 tbsp olive oil
- some soy sauce
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Prepare the noodles according to the package instructions. Heat the oil in a pan and fry the duck until well cooked, frying the skin until crispy. Drain the noodles and set aside until the duck is cooked through. Then remove the duck from the pan and place on a large cutting board. Pre-cook the frozen vegetables in the duck stock, then add the noodles. While the vegetables and noodles are simmering, cut the duck into bite-sized pieces and add it back in. Simmer the ingredients for about 5-8 minutes. Finally, add soy sauce, if desired, until the noodles turn golden brown. Stir in the sauce well and let the meat and vegetables simmer a little longer. Tip: For those of you who don’t like soy sauce: Maggi works just as well. Simply add Maggi seasoning to taste and stir in well until the noodles turn golden brown. You can also chop up fresh vegetables (carrots, celery) and add some bean sprouts. This will make it taste even fresher.
