Peanut curry with udon noodles and chicken

Ingredients for 1 servings:

  • 100 g chicken meat
  • Oil for frying
  • 200 g udon noodles
  • 200 g Asian vegetable mix (frozen)
  • 50 g peanut sauce
  • some curry powder
  • some salt
  • some sesame seeds (optional)

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Chop the chicken into small pieces and sear in a nonstick pan without fat. Meanwhile, cook the udon noodles according to the package instructions (mine took 3 minutes). Add the Asian vegetable mix to the chicken in the pan and stir-fry. Drain the noodles and add them. Season everything with salt, curry powder, and the peanut sauce to taste. Tip: If you like, garnish the dish with 1-1.5 teaspoons of sesame seeds. Per serving: approx. 42.1 g protein, 15.6 g fat, 78.9 g carbohydrates, 643 kcal
