Potato butter cookies

Ingredients for 1 servings:

  • 3 egg yolks, boiled
  • 140 g potatoes, cooked
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 150 g butter, soft
  • 250 g flour
  • ½ tsp baking powder

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

First, mash the egg yolks with a fork and press the potatoes through a potato ricer. Add the sugar, vanilla sugar, and butter and mix everything together (I still use a fork). Finally, add the flour and baking powder and knead into a dough with your hands. Shape the dough into a log, wrap it in cling film, and place it in the refrigerator for about 30 minutes. Preheat the oven to 180°C (fan/convection oven). Cut the dough into approximately 0.5 cm thick slices and place them on a baking sheet lined with baking paper. Bake the cookies for 15-20 minutes until golden brown, then let them cool. They are now ready to eat or can be finished with glaze, powdered sugar, or icing, if desired.
