- 600 g potatoes
- 3 tbsp oil
- 1 onion(s)
- Sausages and meat, leftovers from the barbecue
- salt and pepper
- 2 eggs

ideal for the barbecue season
Boil the potatoes, then peel and cut into approximately 5 mm thick slices. Chop the barbecue leftovers into small pieces and finely chop the onion. Heat the oil in a non-stick pan and fry the potato slices, turning frequently and breaking them up a little with a spatula. Add the onions and barbecue leftovers, season with salt and pepper, and continue frying until well browned and crispy. In a separate pan, fry one fried egg per person. Divide the contents of the potato leftovers pan among portion plates and place a fried egg on each. We have this potato pan after big family barbecues, because it’s easy to misjudge the amount of grilled sausages and meat and end up with leftovers.
