Leberkäse with fried potatoes and fried egg

Ingredients for 2 servings:

  • 2 large slices of Leberkäse
  • 2 eggs
  • 3 large potatoes, boiled
  • 1 small onion(s)
  • 1 tsp caraway seeds
  • 1 pinch(s) of cayenne pepper
  • salt and pepper
  • oil

Peel boiled potatoes from the day before or freshly cooked potatoes and cut into approximately 0.5 cm thick slices. Peel the onion and slice them thinly. Fry the potato and onion slices together in a sufficiently large pan in a little vegetable oil, sprinkle with the caraway seeds. Fry the fried potatoes for approximately 8-10 minutes over medium-high heat, stirring occasionally. In another pan, fry the eggs over medium heat until they are fried. At the same time, fry the meatloaf in a third pan on both sides until nicely browned. The fried eggs do not need to be turned; when you can see the yolk bubbling gently, they are done. Season the fried potatoes with salt, pepper, and cayenne pepper and fry for another 3-4 minutes over high heat until crispy. Arrange everything on plates, placing the fried eggs on top of the meatloaf slices and sprinkling with a little salt and pepper.
