Ingredients for 4 servings:

  • 1 kg smoked pork in one piece
  • 1 onion(s)
  • pepper
  • n. B. water
  • some oil
  • possibly sauce thickener
  • possibly salt and pepper
  • possibly mustard
  • possibly broth

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

First, take the smoked pork and season it on each side, as much as you like. Then, take a pot that will comfortably fit this piece of pork. Fry the smoked pork with a little oil on each side until it’s a little brown. Meanwhile, peel and halve an onion, then add it to the smoked pork to brown a little. When you think it’s browned enough, add about half of the smoked pork water to the pot. Close the lid and let it simmer for about 1-1.5 hours. Stir occasionally, or turn the smoked pork over. When the time’s up, do the fork test. You poke the meat. If the smoked pork falls back slowly from the fork, the meat is cooked. When the meal is ready, taste the sauce. If it’s strong enough, you can either leave it as it is or thicken it a little. If it doesn’t have the flavor you’re looking for, add a little salt, pepper, mustard, or broth. Always taste for flavor. You can serve this dish with almost anything. From potatoes, croquettes, and French fries to vegetables (asparagus, Brussels sprouts).
