One-pot shrimp pasta

Ingredients for 2 servings:

  • 200 g shrimp(s) or seafood
  • 200g farfalle
  • 200 ml cream
  • 350 ml water
  • 100 g spinach, frozen
  • 10 cherry tomatoes
  • 2 cloves garlic
  • 1 m.-sized onion(s)
  • 2 tbsp tomato paste
  • 100 g Parmesan or other cheese, e.g. mozzarella, Emmental
  • some olive oil
  • some salt and pepper
  • possibly chili flakes, chili pepper or chili sauce

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

First, finely chop the onion and garlic (and chili pepper, if desired). Halve the tomatoes and grate the cheese. Heat a little olive oil in a large pot and sauté the garlic and onion until translucent. Add the tomato paste and fry briefly. Deglaze everything with the cream and water and add a teaspoon of salt. Bring to a boil. Add the pasta to the pot and cook for about 10-12 minutes. Halfway through, add the shrimp. Once the pasta is al dente, add the spinach. Allow it to warm through and season with salt, pepper, and chili. Once the spinach has thawed, add the tomatoes and 2/3 of the cheese and allow them to warm through. Plate the one-pot pasta and serve sprinkled with the remaining cheese. This recipe is super easy and very versatile. The shrimp/seafood can be adapted for a vegetarian version by using delicious vegetables like zucchini or peppers. The sky’s the limit!
