Caramel tomato pasta

Ingredients for 1 servings:

  • 100g spaghetti
  • 150 g cocktail tomatoes
  • 1 tbsp butter
  • 1 tbsp sugar
  • ½ tsp sambal oelek
  • salt and pepper
  • possibly Parmesan

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Cook the pasta in salted water according to the package instructions. Meanwhile, wash the cherry tomatoes and halve them. For the caramel, heat a pan and melt the butter. Add the sugar and gently caramelize. You can make the caramel darker or lighter, depending on your taste. Now carefully place the cherry tomatoes, cut-side down, into the caramel. Be careful, they might splatter! Let the caramel tomatoes simmer for a few minutes over low heat without stirring. When the pasta is cooked, drain the water. Stir the caramel tomatoes, season with salt, pepper, and sambal oelek, then add the pasta and mix to combine. Serve best with a nice, colorful salad. The dish can be rounded off with Parmesan cheese, but I prefer it without cheese.
