Carrot and tofu patties

Ingredients for 1 servings:

  • 60 g tofu
  • 2 small carrots
  • 1 clove(s) garlic
  • 1 tbsp soy flour
  • 2 tbsp water
  • 2 tbsp sunflower oil
  • 1 tbsp breadcrumbs, fine
  • ½ tsp, stripped thyme, dried
  • 1 pinch of nutmeg, freshly grated
  • 1 pinch of ground cumin
  • n. B. Salt
  • n. B. Pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Wash, peel, and finely grate the carrots. Finely chop the garlic or press it through a press, or use garlic paste. Pat the tofu dry and mash it very finely with a fork. Place the tofu in a bowl with the grated carrots, garlic, and breadcrumbs. Mix the soy flour with the water and add it. Knead everything with your hands until you have a pliable dough. If the dough is too soft, add a little more breadcrumbs. Season generously with salt and pepper, and season with thyme, cumin, and nutmeg. Makes two or three patties. Fry in sunflower oil over medium heat for about five minutes on each side until browned to your liking. Serve with a salad, for example.
