Wash the red lentils and bring to a boil with about 400 ml of salted water. Simmer over medium heat for about 15 minutes, until the lentils are nice and creamy. Meanwhile, chop the onion, pumpkin seeds, and nuts in an electric food processor. Finely grate the Gouda cheese. Mix the lentils with the quark and the finely chopped nuts and onion. Add the cornstarch and grated cheese. Season with herb salt, pepper, cayenne pepper, and the crushed garlic. Mix everything well. Form the mixture into about 9 burgers and fry in hot olive oil for about 10 minutes, until browned on all sides. Serve with a dip like tzatziki or a spicy tomato sauce and a fresh salad.
