Spaghetti scampi with cherry tomatoes

Ingredients for 4 servings:

  • 500g spaghetti
  • 300 g scampi, frozen
  • 50 g Parmesan, coarsely grated
  • 1 shot of white wine
  • 1 garlic clove(s)
  • 1 onion(s), red
  • salt and pepper
  • 500 g cherry tomatoes
  • 1 tbsp vegetable oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Spaghetti with scampi, cherry tomatoes, garlic, white wine sauce and Parmesan

Briefly fry the scampi in hot oil and then remove from the pan. Dice the onions and cook them in the scampi’s frying fat until translucent. Crush the garlic and add it. Bring to a boil and deglaze with white wine. Meanwhile, cook the spaghetti until al dente and halve the cherry tomatoes. Add the scampi to the sauce, season, and add the spaghetti to the pan and stir well. Then add the cherry tomato halves and mix. Serve on plates and grate Parmesan cheese over the top.
