Ingredients for 4 servings:
- 500 g tagliatelle pasta
- 300 g scampi
- 300 g cherry tomatoes
- 200 ml olive oil, good
- 5 g ginger
- 2 garlic cloves
- 1 large chili pepper(s), fresh, spiciness to taste
- 1 onion(s), red
- e.g. salt and pepper
- e.g. parsley
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Wash and dry the thawed scampi. Dice the garlic, chili, ginger, tomatoes, and onion. Heat 150 ml of olive oil in a wok or deep frying pan. Meanwhile, cook the pasta in plenty of salted water according to the package instructions. Add the garlic, chili, ginger, and onion to the oil and fry for about 5 minutes, until the garlic is golden brown. Add the scampi. After another 5 minutes, add the tomatoes. Meanwhile, the pasta is ready. Add it little by little and pour in the remaining olive oil. Fry for about 5 minutes more. Season with salt, pepper, and parsley, if desired.
