Feta cheese soup

Ingredients for 4 servings:

  • 1 kg minced meat, mixed
  • 3 large cans of tomatoes
  • 3 cups of cream
  • 1 kg sheep’s cheese
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 1 tbsp basil
  • pepper
  • Salt

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Brown the ground meat in a large, hot pot. Purée the canned tomatoes and add them along with the herbs. Simmer for about 30 minutes to reduce the liquid. Now add the cream and crumbled feta cheese and bring back to a boil briefly. Season with salt and pepper and serve with flatbread. Tips: You can also add garlic. The tomatoes are easiest to purée with a hand blender. You can certainly use pre-pureed tomatoes, but they are more expensive. The feta cheese can also be the cheaper herder’s cheese.
