Ajvar minced meat soup

Ingredients for 4 servings:

  • 600 g minced meat, mixed or beef
  • 1 onion(s)
  • 1 small garlic clove(s)
  • 600 ml broth
  • 250 ml Cremefine for cooking or cream
  • 300 g Ajvar, mild
  • 1 package of sheep’s cheese, e.g. Patros with herbs
  • 200 g cream cheese spread
  • salt and pepper
  • Paprika powder, sweet or hot
  • some cayenne pepper, to taste

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Party soup, quick and easy

Brown the minced meat in a pan until crispy. Meanwhile, peel and finely dice the onion. Add it to the minced meat. Peel and crush the garlic, and add it to the minced meat. Deglaze with the stock. Now add the cream cheese spread and the ajvar. If you like it very spicy, use the spicy version; I like to mix it. Use about 300g because I always use a jar; it depends on the manufacturer. Stir in the cremefine or heavy cream. Bring everything to a boil and season to taste. Sprinkle with a few cubes of feta cheese on the plate. Serve with warm baguette or garlic baguette.
