Ingredients for 3 servings:
- 1 cup rice
- 400 g minced meat, organic, or 500 g normal
- 1 small onion(s)
- 0.33 cucumber(s)
- 6 cocktail tomatoes
- 1 vegetable stock cube
- possibly parsley
- salt and pepper
- some oil or butter for frying

super easy and fast
One cup holds 125 ml. Put a pot of hot water on the stovetop, wait until it boils, and then dissolve the vegetable stock cube. Add the rice and cook according to the package instructions. Tip: I always make the rice in the Thermomix. I personally prefer it because the rice is gently steamed. If you have a rice cooker, you can also cook it in that. Peel the onion and cut it into small cubes. Heat a little oil or butter in a pan and fry the minced meat for about 2 minutes. Add the onions and fry for another 3 minutes over medium heat, stirring occasionally. Season the minced meat well with salt and pepper. While the minced meat is cooking, halve and slice the cucumber and quarter or eighth the cherry tomatoes. Once the minced meat and onions are thoroughly cooked, add the cucumbers and tomatoes, mix well, and cook for another 5 minutes over medium heat, stirring occasionally. Now add the cooked rice, stir, and season to taste. If you like, you can also add parsley.
