Warm potato salad

Ingredients for 8 servings:

  • 1 kg potatoes
  • 1 ring/e meat sausage, preferably with garlic
  • 8 gherkins, no gherkins
  • 3 large onions
  • e.g. salami (paprika salami), small slices
  • 3 cups sour cream
  • 6 eggs (size M)
  • Fat for the mold
  • salt and pepper
  • possibly paprika powder

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours 15 minutes

delicious, quick, and simple

IMPORTANT: Do not drain the pickle juice! Boil the potatoes in their jackets and braise the onions until translucent. Peel the potatoes, dice the sausage, and finely chop the cucumbers. Grease a baking dish and arrange the salami slices in it until the bottom is covered. Place the potatoes, sausage, and cucumber cubes on top of the salami and season with salt, pepper, and optionally paprika. Whisk the sour cream and eggs together in a mixer and add a tablespoon of the pickle juice. Pour the sauce over the mixture in the baking dish and bake in the oven at 180°C (fan oven) for 1 to 1 1/4 hours. Please cover for the first 20 minutes, as the dish will turn black very quickly!
