Mozzarella – tomatoes

Ingredients for 6 servings:

  • 6 small tomatoes
  • 150g mozzarella
  • 2 tbsp olive oil, cold pressed
  • 2 tbsp vinegar (wine vinegar)
  • 2 tbsp mozzarella – whey
  • 2 tbsp basil leaves, roughly chopped
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Wash and dry the tomatoes, then cut the tops off each one. Hollow out the tomatoes and season with salt and pepper. Finely dice the mozzarella. Mix the oil, vinegar, and whey together and season with salt and pepper. Add the basil leaves. Add the mozzarella cubes to the marinade and let it marinate for at least an hour. Fill the mixture into the hollowed-out tomatoes and garnish with basil leaves to serve.
