Lamb's lettuce with potato dressing for dieters

Ingredients for 1 servings:

  • 1 portion of lamb’s lettuce, generously sized
  • 2 potatoes
  • 1 tsp vegetable broth, granulated
  • 1 tsp mustard
  • 2 tsp oil
  • 1 tbsp balsamic vinegar, mild white

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Trim and wash the lamb’s lettuce and arrange it on a plate. Cook the potatoes until very soft and mash them with about 125 ml of the cooking water and the stock powder. You can also press the potatoes through a potato ricer into the cooking liquid. Mix with the remaining ingredients and pour over the lamb’s lettuce as a sauce. This dish has 3 points.
