Arugula salad with mushrooms

Ingredients for 4 servings:

  • 2 bunches of arugula
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • salt and pepper
  • ½ tsp paprika powder, mild
  • 100 g mushrooms, fresh
  • 1 garlic clove(s)
  • 1 onion(s)
  • 3 bell peppers, red, yellow and green

Working time approx. 15 minutes; Total time approx. 15 minutes

A delicious summer salad

Wash, trim, and coarsely chop the arugula. Combine the balsamic vinegar, 1 tablespoon of olive oil, salt, pepper, and paprika, and add to the arugula. Wipe the mushrooms with a paper towel and slice them. Peel and finely chop the onions and garlic. Sauté them in 1 tablespoon of olive oil until translucent. Wash the bell peppers, remove the seeds and inner membranes, and cut into small cubes. Add them to the arugula salad along with the onion, garlic, and mushrooms, and mix everything carefully and thoroughly.
