Wild garlic potato gratin

Ingredients for 3 servings:

  • 500 g potatoes
  • 10 g butter
  • 50 g wild garlic
  • 100 g cream
  • 200 ml milk
  • 90 g cheese (e.g. Gruyère) in one piece, finely grated
  • salt and pepper
  • nutmeg
  • Butter for the mold

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 180°C (top/bottom heat). Peel and wash the potatoes, and slice them thinly. Wash the wild garlic under running water, pat dry with kitchen paper, and slice them thinly. Mix both and add salt if desired. Then layer the potato slices in a buttered casserole dish in a layered manner. Combine the cream and milk in a tall mixing bowl, stir, and season with salt, pepper, and nutmeg. Add the grated cheese and stir. Pour this cream mixture over the potatoes. Bake in the hot oven on the middle shelf for approximately 35-40 minutes until golden brown. Tip: A semi-firm potato variety works best for this.
