Mushroom salad

Ingredients for 4 servings:

  • 250 g mushrooms, fresh
  • 2 tbsp lemon juice
  • 2 stalk(s) leeks
  • 3 tbsp olive oil
  • ½ tsp salt

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Clean the mushrooms and leek and slice both into thin strips. In a salad bowl, toss the mushrooms in the lemon juice until the slices are slightly moistened. Add the leek, oil, and salt, and toss again. Let the salad marinate in the refrigerator.
