Mediterranean tofu patties

Ingredients for 2 servings:

  • 130 g tofu, firm
  • 1 egg(s)
  • 1 small zucchini
  • 1 small carrot(s)
  • 1 small bunch of spring onions
  • 10 tomatoes, dried
  • 6 tbsp oat flakes
  • 20 g Parmesan
  • 2 tsp tomato paste
  • Oregano, dried
  • basil
  • Thyme
  • a little cumin
  • e.g. breadcrumbs
  • n. B. Boiling water
  • Olive oil, for frying

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Italian-inspired tofu and vegetable patties. They taste especially delicious with braised peppers.

Finely dice the sun-dried tomatoes and add them to the oats. Mix with the dried oregano. Pour boiling water over everything and let it swell for a few minutes. Use enough water to just cover the oats. Meanwhile, finely mash the tofu with a fork. Finely grate the carrot and zucchini and add them to the tofu. Finely dice the spring onions, grate the Parmesan cheese, and add them to the tofu mixture. Finely chop the basil and thyme and add them as well. Add the egg, tomato paste, and soaked oats to the tofu, season with pepper, a little cumin, and salt, and mix thoroughly. Add enough breadcrumbs to form a pliable mixture. Form the tofu mixture into patties and fry in olive oil until golden brown.
