Pickled vegetables and feta cheese for grilling

Ingredients for 4 servings:

  • 4 servings of mixed vegetables, e.g. zucchini, fennel, onion, mushrooms, cherry tomatoes, eggplant, etc.
  • 100 ml sunflower oil, or, germ-
  • 3 tbsp red wine vinegar
  • 2 tbsp honey
  • 2 tsp mustard, medium hot
  • 1 tsp thyme
  • ¾ tsp salt
  • ¼ tsp pepper
  • 1 pack of feta cheese, cut into cubes

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 35 minutes

Make a marinade with all the ingredients, except the vegetables and feta cheese, and season to taste. Either cut the vegetables into larger pieces and mix them with the marinade. Let them sit for 1 hour, then grill them with the feta cheese in shallow aluminum trays. Or cut them into smaller cubes, thread them onto roulade skewers, marinate them, and then grill them.
