Spaghetti alla Claudia

Ingredients for 4 servings:

  • 500g spaghetti
  • 1 tube(s) Tomato paste
  • 2 onions
  • 2 cloves garlic
  • ½ cup red wine
  • ½ cup vegetable broth
  • ½ cup carrot juice
  • 1 ball of mozzarella
  • e.g. Parmesan, grated
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp sweet paprika powder
  • 1 tsp paprika powder, hot
  • salt and pepper
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cook spaghetti according to the package instructions. Dice the onion and garlic and sauté in olive oil. Add tomato paste and sauté until toasted. Deglaze with vegetable stock and red wine. Stir continuously, then add the carrot juice and seasoning. Drain the spaghetti, transfer to a plate, and arrange the chopped mozzarella on top. Pour the sauce over the top and finish with the Parmesan cheese.
