Ingredients for 2 servings:

  • 2 large zucchini
  • 150 g cherry tomatoes
  • 1 ball of light mozzarella
  • 200 g cream cheese
  • 1 handful of black olives, as desired
  • 1 can tuna in its own juice
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Preheat the oven to 190°C (top/bottom heat). Meanwhile, prepare the filling in a bowl. Drain the tuna and then add it to the bowl. Finely chop the olives and tomatoes and add them. Mix in the cream cheese, season generously with salt and pepper, and grate half of the mozzarella into the bowl. Set the other half of the ball aside. Halve the zucchini in half and slice lengthwise. Use a teaspoon to scrape out the insides, but not too much, or the boats will lose their grip. Now spread the prepared tuna filling among the zucchini and grate the remaining mozzarella over the top. Place the boats in a baking dish and bake on the middle rack of the preheated oven for about 15 minutes.
