Anne's tomato soup

Ingredients for 4 servings:

  • 400 g tomatoes (can)
  • 200 ml whipped cream
  • 1 onion(s), finely chopped
  • 2 tbsp tomato paste
  • 100 ml vegetable stock
  • 1 pinch(s) of sugar
  • salt and pepper
  • oregano
  • basil
  • olive oil

Working time approx. 15 minutes; Total time approx. 15 minutes

fruity – creamy

First, fry the finely chopped onion in heated olive oil until lightly browned. Then add the canned tomatoes, the cup of heavy cream, and the tomato paste to the pot. Then add the vegetable stock and season with sugar, spices, and herbs. Let everything simmer for about 10 minutes, then serve hot. Tips: Adding rice and beaten eggs makes the soup even more filling, making it suitable as a main course. The more liquid you want the soup to be, the more vegetable stock dissolved in warm water you should add.
