Stuffed peppers, vegetarian

Ingredients for 2 servings:

  • 3 medium-sized bell peppers
  • 90 g Lentils (Pardina Lentils)
  • n. B. water
  • 2 small potatoes, boiled from the previous day
  • 70 Milk, low-fat or skimmed
  • 1 tsp, heaped cream cheese (4% fat)
  • 1 tsp broth, granulated (organic)
  • Herbs (thyme, oregano, rosemary)
  • 1 clove(s) garlic
  • 1 tsp, heaped Ajvar, spicy
  • 1 tsp cornstarch
  • salt and pepper
  • 20 g cheese, possibly reduced-fat, grated

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Lots of protein, hardly any fat – delicious, filling diet food!

Cook the lentils in plenty of water (no salt water, no broth) for about 20 minutes until almost tender. Meanwhile, halve the peppers vertically and hollow out the cores, then place the halves side by side in a small baking dish. In a bowl, combine the milk and chopped garlic and season with the broth. Dice the potatoes (leftovers from the day before) and add them. Also add the cream cheese, ajvar, herbs, and spices. Drain the lentils, refresh briefly, and add them. They should be well drained and no longer hot when added to the rest of the mixture. Mix in half of the cheese and the teaspoon of cornstarch. The cornstarch will further thicken the filling of the peppers when heated later. Now fill the pepper halves with the mixture and sprinkle with the remaining cheese. Cover the bottom of the baking dish with a little water around the peppers (about 1/2 cm high). Bake in a preheated oven at 180°C (convection oven) for 20 minutes, until the beans are nice and tender. If the water in the casserole dish has already evaporated, add a little more. Ideally, it should be completely gone by the end. If you don’t have any potatoes on hand from the day before, you can cook them with the lentils. Since they’ll be cooked without salt, you may need to add more salt to taste. Non-vegetarians can add a slice of finely chopped cooked ham to the filling, if they like. This makes it even higher in protein (important for weight loss) while still being fat-free.
