Sweet potato pancakes

Ingredients for 2 servings:

  • 2 large sweet potatoes
  • 1 small onion(s), red
  • 3 eggs
  • 2 tbsp flour
  • salt and pepper

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Peel the sweet potatoes, quarter them, and coarsely grate them. Finely chop the onion. Mix all the ingredients together and season to taste. Fry small fritters in a pan with plenty of oil. The fritters take quite a while to stick together enough to be turned. So be patient and don’t turn them too soon. But of course, don’t let them burn. After frying, place the fritters on kitchen paper so the oil can drain out. If you’re making a lot of fritters, it’s a good idea to keep the already fried ones warm in the oven. To do this, after draining the fritters, place them on a wire rack on the middle shelf of the oven at around 150°C (fan oven). The ingredients were enough for about 12 fritters.
