Leek – Cheese – Toast

Ingredients for 4 servings:

  • 4 stalk(s) leeks
  • 25 g butter
  • 1 tbsp flour
  • 1 shot of white wine, optional
  • 1 dl cream (full cream)
  • 2 egg yolks
  • 150 g cheese, grated Gruyère cheese
  • 8 slices of white bread
  • 25 g butter
  • some salt and pepper, from the mill
  • 1 pinch of nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Prepare the leek, slice it into thin rings, wash it thoroughly, and drain. Melt 25g of butter in a large frying pan, add the leek, and cook for 2-3 minutes, stirring occasionally. Sprinkle the flour over the leek, mix well, add the cream, and simmer gently for 2-3 minutes. Remove from the heat. Stir in the egg yolks and 100g of cheese, and season with salt, pepper, and nutmeg. In a non-stick frying pan, lightly toast the bread slices on one side in 25g of butter. Place the slices of bread, cooked side up, on a baking sheet lined with baking paper and drizzle with a very small amount of white wine. Pour the leek mixture on top and sprinkle with the remaining cheese. Bake in the oven at 200°C for 10-15 minutes.
