Green Asparagus and Salmon from Tray

  • 1 kg Green asparagus
  • 700 g Salmon fillet
  • 1 Lemon
  • 1 Lime
  • 3 tbsp Olive oil
  • 1 tsp Sugar
  • 2 tbsp Bianco balsamic vinegar
  • Salt pepper
  • 1 Baguette
  • 3 tbsp Olive oil
  1. Wash the asparagus, cut off the lower ends and blanch in salted water for 1 minute.
  2. Then immediately quench in ice water.
  3. Place the salmon fillet on a baking sheet lined with baking paper, season with salt and pepper.
  4. Wash the lemon and lime with hot water and finely grate the peel.
  5. Spread the lemon and lime zest on the fillet.
  6. Place the asparagus on the baking sheet.
