Pasta with Green Asparagus and Smoked Salmon

Ingredients
 

  • 300 g Flour
  • 2 Eggs
  • 1 Egg yolk
  • Salt
  • 1 tbsp Olive oil
  • 1 tbsp Water
  • 125 ml Cream
  • 1 Onion
  • 500 g Cooked green asparagus
  • 200 g Smoked salmon
  • Salt pepper

Instructions
 

  • Knead the pasta dough from 300g flour, 2 eggs, 1 egg yolk, 1 tablespoon of olive oil, salt and 1-2 tablespoons of cold water, then let the dough rest in the refrigerator for 1 hour. Then the dough is turned through the pasta machine and pasta is made as desired. I made ribbon noodles in this case. Then put the noodles in plenty of boiling salted water and cook for about 2 minutes .. then strain.
  • Boil the green asparagus in salted water (I also add a pinch of sugar, possibly also a little lemon juice). When the asparagus is done, refrain from using it and rinse with cold water. Then in approx. Cut 3cm long pieces. For the sauce, heat the butter in a pan, sweat the chopped onions in it until translucent, add the asparagus pieces and sweat them briefly, pour in the cream and bring to the boil, add the noodles and stir in, cut the smoked salmon into pieces and mix with the noodles, season with salt and pepper to taste.
