Ingredients for 4 servings:

  • 500 g celeriac
  • 2 tbsp vinegar
  • 250 g butter cheese
  • 100 g flour
  • 3 eggs
  • 150 g breadcrumbs
  • 250 g clarified butter
  • 2 lemons, cut into large wedges
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the celeriac and cut into thick slices. Cook in a little salted water with vinegar for about 10 minutes. Rinse briefly and drain. Cut the celery and butter cheese into 4 cm squares. Place a piece of cheese between two pieces of celery and coat them with the flour, eggs, and breadcrumbs. Fry in a pan with hot clarified butter until golden brown. Garnish with lemon wedges and serve.
