Sponge cake – always successful

Ingredients for 1 servings:

  • 5 eggs
  • 220 g sugar
  • 1 packet of vanilla sugar
  • 180 g flour, sifted
  • ½ pack of baking powder
  • some fat and breadcrumbs for the form

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

First, I set my oven to 175°C (top and bottom heat). Then I take a 26 cm diameter baking pan and place baking paper on the bottom layer, grease the edges, and sprinkle with breadcrumbs. Discard any breadcrumbs that don’t stick. Beat the 5 eggs (do not separate them), 220 g sugar, and vanilla sugar with a mixer for 5 minutes until frothy—but no less. Quickly fold in the sifted flour and baking powder. The finished batter is immediately poured into the baking pan and placed on the middle rack of the oven. Bake for 30 minutes. Remove the baking paper immediately after baking. If you need a darker base, simply add 1 tablespoon of cocoa powder to the sugar.
