Ingredients for 4 servings:

  • 250 g raspberries, frozen
  • 50 g speculatius biscuits
  • 1 tbsp lemon juice
  • 2 tbsp vanilla sugar
  • 200 g mascarpone
  • 500 g low-fat curd cheese
  • 100 ml milk
  • 100 g sugar
  • 1 pinch of cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Crumble the speculatius biscuits. Combine thawed raspberries with lemon juice and 1 packet of vanilla sugar. Beat the mascarpone, quark, milk, sugar, vanilla sugar, and cinnamon with an electric whisk until creamy. Fill 2/3 of the biscuit crumbs into dessert glasses, top with raspberries, and finish with the quark cream. Decorate with raspberries and the remaining crumbs.
