Vegan avocado brownies

Ingredients for 1 servings:

  • ½ avocado(s)
  • 50 ml olive oil
  • 60 g cocoa powder
  • 110 g cane sugar
  • 3 tsp coffee
  • 175 ml water
  • ½ tsp salt
  • 120 g wheat flour
  • 1 tsp baking soda
  • 100 g dark chocolate

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

incredibly juicy

First, preheat the oven to 180°C (top/bottom heat) and line the brownie pan with parchment paper. Mash half an avocado with a fork and cut the dark chocolate into small pieces. In a bowl, combine the mashed avocado and oil (I like to use a whisk for this, but a fork will do, too). Add the flour, cocoa powder, coffee, brown sugar, baking soda, salt, and water and mix again until the batter is smooth. Finally, fold the chocolate pieces into the batter and then pour the batter into the prepared pan. Bake in the hot oven for 15 to 20 minutes (after 15 minutes, check the batter for stickiness with a toothpick—it shouldn’t be too sticky, but it definitely shouldn’t be dry either).
