Fruity carrot salad

Ingredients for 3 servings:

  • 8 m.-large carrot(s)
  • 2 oranges
  • 1 lemon(s)
  • 3 tbsp maple syrup
  • 50 g sunflower seeds

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the carrots and grate them very finely (use a food processor if you have one). Squeeze the lemon and squeeze the juice over the grated carrots. Mix with the maple syrup. Peel and fillet the orange, cut the fillets into pieces, and fold them into the salad. Let the salad sit for a few minutes, then sprinkle the sunflower seeds over the salad and serve.
