Wolfi's stuffed peppers

Ingredients for 2 servings:

  • 800 g bell pepper(s)
  • 300 g tofu (silken tofu works well)
  • 300 g spinach
  • 100 g onion(s)
  • Soy sauce
  • salt and pepper
  • nutmeg
  • possibly garlic
  • possibly oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with tofu and spinach

Cut the tops off the peppers and remove the cores. Finely chop the onions, dice the tofu, and chop the spinach (or let it thaw). In a non-stick pan (add a little oil if necessary), fry the onions and tofu until golden brown. Add the spinach and season well with nutmeg, salt, pepper, and the remaining ingredients. Fill the hollowed-out peppers with the mixture and place them in an ovenproof dish. Bake in a preheated oven at 180°C for about 25 minutes. (As always, baking times can vary, so here’s my tip: check it every now and then.) The entire recipe has just under 390 calories.
